A true Australian summer is not complete without some fresh king prawns, a BBQ and friends. This BBQ prawn recipe is great to have prepared ahead of time and just marinate and 'grill' when you are ready to eat. Enjoy.
30 x Large King prawns - peeled with tails on and deveined
70ml light extra virgin olive oil
3 tbsp sesame oil
1 tsp of crushed or chopped fresh ginger
1 garlic clove, crushed
2 tbsp oyster sauce
4 tbsp honey
1 tbsp fish sauce
1 Red chilli
Freshly cut lime cheeks for serving
Picked Fresh Coriander
Put the olive oil and sesame oils, ginger, garlic, oyster sauce, sweet soy, fish sauce and chilli into a small saucepan.
Bring to a simmer, stir to combine and set aside.
Marinate prawns for 1 minute in the sticky sauce before cooking, then chargrill on a BBQ grill over high heat for 2 minutes on each side.
The sauce should be slightly charred, squeeze the lime over the prawns, garnish with sesame seeds and fresh coriander. Serve with a tossed green leaf and cherry tomato salad.
Note: the prawns can also be cooked in a hot wok over high heat, tossing for a few minutes.
